Sweet Corn Chicken Soup

Peace Greetings to you!

This soup is the only soup I’ve grown up eating. It is tasty and very nutritious with a lot of vegetables, chicken and sweet yummy corn. Kids will love it as much as adults. I like to add a few slices of chillies soaked in vinegar in my soup for some tangy, spicy and sweet all going in!

There is no oil/butter yet its super delicious. It makes a decent batch that feeds a crowd. You can halve the recipe if you want to make a smaller batch. But I suggest making this, sharing with your family, friends and neighbours and also keeps well in the refrigerator for a couple of days.

Sweet Corn Chicken Soup

2 litres Water
2 cubes of Chicken stock (I use Maggi)
1 can cream-style sweet corn
1 small can whole sweet corn, drained
a handful of green beans sliced into thin discs
1 large carrot chopped
1 green capsicum cubed
a handful of mushrooms chopped
2 medium-sized chicken breasts chopped finely
1 egg
6 tbsp cornflour
1.5 tbsp milk powder
salt and pepper to taste

In a large soup pot, add water, chopped chicken and veggies, pour the creamy corn, and the drained corn and crumble the stock cubes in. Bring it to a rolling boil.

This will take a while (around 15 mins), make sure to keep stirring once in a while so nothing catches at the bottom.

Once it boils and the chicken and veggies looked cooked but not mushy, pour 1/2 cup water to a cup and add the milk powder and cornflour and whisk well until its a smooth slurry. If its too tight/ thick add a little more water to loosen.

Add the smooth cornflour slurry to the soup pot and bring it to a boil, stirring constantly. It will start thickening and boiling.

In the same cup, crack an egg and whisk it really well. Now pour the beaten egg slowly bit by bit in the boiling soup, while stirring with the other hand. This will form egg drops in the soup.

Bring it to a boil and switch off the flame. Adjust seasoning. Add salt and pepper to taste.

Your soup is ready. It is that easy.

Extra tips/ info:

*Serve with condiments of your choice like soy sauce, chilly vinegar, chilly oil, extra salt/pepper etc, so everyone can add whatever they please or just leave it out if they don’t prefer.

* Make sure you don’t add too many veggies to the soup. There should be a good balance of veggies, chicken, more corn and soupy broth. You can add your choice of veggies to the soup. I have mentioned what we prefer.

*Cream style corn can be found in the canned food section in the supermarket, near the sweet whole corn. This doesn’t need to be drained or rinsed. Tip the whole thing out of the can into the water for the soup.
