Chicken and Veggie Wonton Cups

400 gms ground chicken/ finely chopped chicken

3 cloves garlic chopped

½ cup diced onion

salt to taste

½ teaspoon ground black pepper

1 cup chopped veggies of your choice (I use mushrooms, colourful peppers, carrots)

½ cup grated cheese ( I prefer cheddar cheese)

Thin Wonton/ Spring roll square Wrappers ( I prefer to use medium-sized square spring roll wrappers from the freezer section)

1 teaspoon chilli powder

½ teaspoon oregano

½ tsp thyme

chopped coriander leaves or any herbs of your choice

2 tbsp ketchup

2 tablespoons Hot Sauce or sweet chilli sauce

2 tablespoons Jalapeno sauce or any sauce you have in your fridge

Let’s prepare :

Preheat oven to 180C.

Spray a muffin tin with non-stick cooking spray.

In a large skillet over medium-high heat, add ground chicken. Season with salt and pepper.

Cook for 2-4 minutes and add diced onion and garlic. Continue to cook and stir occasionally until ground chicken is cooked through, about 8 minutes. Add chopped veggies. Cook off all the water, and make it a dry mixture.

Add the sauces to the chicken and then take off the heat. Stir sauce until all chicken is coated.

Line each cup of prepared muffin tin with a wonton wrapper. Add 1.5 tablespoons chicken mixture. Top with 1 tablespoon of cheese. Press down and add another layer of wonton wrapper, chicken mixture, and a final layer of cheese.

Bake at 180 C for 11-13 minutes until cups are heated through and edges are golden.

Serve with sour cream and chopped herbs for garnish.
