Delicious Homemade Granola

3 Cups (12oz/345g) Rolled oats (large jumbo Oats)
2 Cups (10oz/280g) nuts, chopped (use 1 cup Pecans and the rest a mixture of your favourite nuts and seeds)
3/4 Cup (2oz/60g) Shredded coconut (desiccated coconut)
1/4 Cup plus 2 tablespoons (2oz/60g) dark brown sugar
1/4 Cup plus 2 tablespoons (2oz/60g) honey
1/4 Cup (1 ½ oz/46g) Oil (any oil you prefer)
2 Tbsp warm water
3/4 tsp salt

Preheat oven to 325oF (160oC).
In a large wide bowl, combine the oats, nuts, coconut, and brown sugar.
Now combine honey, water, oil, and salt in a beaker. Pour them over the nuts and take time to mix and coat everything evenly. Be patient. Use a wide large bowl to make it easier and not spill out. Now pour the mixture onto a lined sheet pan. Cook for around 40 minutes, stirring every 20 minutes to achieve an even colour.
Bake until the granola is golden brown all over. It will darken as it cools. So remember not to wait until it gets dark.
Remove from oven and leave to cool completely. Transfer into an airtight container for up to 2 months.

I’ve used chia, pine seeds, sunflower seeds, cashews, flax, almonds, pistachios, walnuts, etc. Use any combination of nuts and seeds you like. Remember that it should be 2 cups of nuts. Don’t leave out the pecans that’s what makes this really yum. But don’t add too much of seeds. Proportion of nuts should be more than the seeds, as it may burn easily.

To serve – We love to take it to work and eat it with yoghurt and fruit. Great breakfast to take on the go. My family crunches and munches them just as is. Serve it with milk! Or top it on muffins before baking, your options are endless.
